  • Wanna Win a $25 Gift Certificate?!

    Hey Quirky Crafters,

    How do you feel about challenges? Specifically, the card making or scrapbooking variety? For me that’s one of my favorite ways to give me the kick in the butt I sometimes need to wake my creative side up. There’s a $25 gift certificate up for grabs to one lucky participant! OH, by the way if you are a digital scrapbooker check out the Month of Challenges #8 at The Lilypad! It runs the entire month of January and there are prizes galore. I usually participate but this year I’ve got too many irons in the fire.

    Speaking of challenges….I’ve got a challenge for y’all! It’s not difficult at all. I created a super simple sketch that can be used for a rubber stamped card(I love stamping!), a computer generated card, traditional scrapbook page or digital scrapbook page(my fave), or even for an art or bullet journal page. The choice is yours.

    Here’s the sketch to follow, add embellishments as desired. The sketch is open to interpretation, please make sure to keep it fairly obvious that you followed the sketch but make it your own! I’m not a stickler to the ‘rules’ I just love seeing other crafter’s creations, what better way to get inspired, right?!

    Simple requirements: ***Please note the date changes below***

    • Create a new project: rubber stamped or computer generated card, traditional scrapbook or digital scrapbook page, or art journal/bullet journal page.
    • Upload to an online gallery, Pinterest, your blog, Photobucket, etc, and comment below with the link.
    • Enter as many times as you like, but with a new project for each entry.
    • Please put in your comment what products you used to create your project.
    • If you used any special techniques please share if you don’t mind.
    • DEADLINE to enter is February 12, 2020 February 21, 2020 at 11:59pm CST.

  • How Depression Led Me to Start My Blog

    Hello everyone,

    **TRIGGER WARNING** this post is about child loss, depression, and suicidal thoughts

    I want to share with you how I got to the point where I started this blogging adventure that led to the birth of A Quirky Crafter. The blog that quite literally gave me my life back!

    My high school sweetie, John and I married when I was 16 and he 18. We had a gorgeous daughter, Amanda, 9 months later, then we welcomed our adorable son, Johnie, 19 months after her. Life was tough, minimum wage was still $3.35 for John, but I had my purpose, I so loved our kids, I was young enough to keep up with them and we had a great time.

    When they started school, Amanda was first, me and Johnie had the BEST 2 years! We played, and bonded. He was truly a Mama’s boy at that time. Even after they were both in grade school we would play. Legos, cars, basketball, later on golf, lots of stuff outside. Life was good.

    When Amanda and Johnie were 15 & 13 I got my GED and went to Medical Assisting school in 1999. It was tough but I love to learn and I graduated with a 4.0 in 2000. I got a job and worked 2 years then changed to a higher paying position. Everything was great! The kids got through school and Amanda had a job in a doctor’s office and Johnie (Bub) went to work at Best Buy.

    In 2010, Bub decided to enroll in Motorcycle Mechanic’s Institute in Phoenix, AZ. I had just started a new job in a doctor’s office and hated to see him go but heck, that’s what we hope for when we raise our kids. We want them to grow, learn, and experience life. He took off on his Harley and rode from Western Ky to Phoenix, AZ. By himself! I was terrified. He did call me one day on his trip, his GPS had died a sudden death and he needed me to find the nearest Best Buy so he could get another. I was thrilled he still needed his mom.

    He did great, he transferred to the Best Buy in Phoenix and worked to put himself through school. We helped him along the way but we were so proud of him for putting his all into school and work. Here he is in his MMI gear with a shaved head and beard. Ha, I sent him razors, shaving cream, and such for Christmas!

    Johnie graduated January 6, 2012. He was a very experienced motorcycle rider and was so careful. On Saturday, January 7, 2012, Johnie and his friends had a graduation party. For whatever reason, Johnie made a very bad decision to leave the party a little after midnight. He didn’t make it far on his bike. I remember the details like it was 5 minutes ago. He crashed just a mile or so from where the party was.

    John and I were sick with a stomach bug on January 7, Johnie(Bub) had called us around 8 pm CST saying he was going to a party. John had him on speaker phone and we both told him to be careful and not ride if he drank. I had a horrible feeling. Then…..

    Sunday morning, January 8th, at 6:03 am, there were 6 knocks on the front door. John got there first, I was right behind wrapped in a quilt. I remember seeing the officer’s hat, one of those almost like a cowboy hat with the large brim with a metal symbol on it. I just started saying “I knew, I knew”, over and over. I collapsed to the floor.

    Our beautiful, precious, son died a little after midnight Phoenix time on January 8, 2012.

    I went back to work a week after. But the nightmares, depression, and anxiety took a major toll on me. John, as well. I worked for 6 months but I was making simple mistakes and just not giving my 110%. I resigned in July 2012. To this day I still have PTSD (I have a very vivid imagination and even though I wasn’t there I picture the accident when I close my eyes). I have night terrors, the depression and anxiety I’ve had all of my life have gotten to the point where I can barely function at times.

    I wanted to try going back to work, I would schedule interviews but come time to go I would have major panic attacks. I finally just gave up. I sank into a major depression in 2018. I pretty much stopped eating, or when I did I would vomit or have to run to the bathroom. The nightmares would have me screaming in the night. I started sleeping way too much. I stopped caring how I looked or if I was clean. I ignored the bills. I gave up on life. I became suicidal in 2019. Luckily, I didn’t succeed, I’m sure the good Lord had a hand in that.

    After my last hospital stay last in June 2019, I started feeling more my old self. My meds were apparently at the right doses. I started wanting to do things again! I had blogged before and even did graphic design. I found a new passion. I’m now excited to get up and get started every day. I’m constantly brainstorming ideas, I’m taking online courses, learning new things. I have a newfound ambition! Instead of being barely able to get out of bed, I now hit the floor running, not literally, but you get the idea.     Main thing, if you are suffering with depression, anxiety, etc, don’t give up! I promise you, there is a reason you are here, WE are here. I know how it is when things are at their darkest, when it feels like there is no longer a purpose. But I gotta tell ya, there IS a purpose, there IS a reason you are still here. Please never give up. There is always help, always hope.

    I will never stop missing Johnie, and I still remember him every moment of the day. I mostly remember him with joy now. I feel he would be pleased that I’m no longer held hostage to the debilitating pain of depression. It’s still there but it’s under control.

  • To-Die-For White Queso Cheese Dip

    Hi everyone! Do y’all love food like me? When you are in a restaurant and taste something that almost makes you want to run and kiss the cook, do you try to figure out the ingredients? And how to replicate the dish at home? I’m guilty of that, sometimes it works out, this White Queso Dip is one of those times.

    I’m addicted to Mexican food, the authentic stuff especially. Don’t get me wrong Tex-Mex is good, too, but sometimes a little too spicy for someone with acid reflux. I could seriously eat Mexican every day. I especially love anything with chicken in it, like these Easiest and Yummiest Baked Chicken Chimichangas Ever!

    White Queso Sauce

    To Die For White Queso Sauce

    Equipment

    • slow cooker

    Ingredients

    • 1.5 pounds deli sliced american white cheese land 'o lakes is awesome
    • 1/2 cup 2% milk or half and half
    • 2 tbsp diced jalapenos from a jar, fresh might be too hot (optional)

    Instructions

    • Add cheese to slow cooker/crock pot then pour milk in, add jalapenos(optional). Cook on low.
    • Stir occasionally. Serve when melted.

  • Easiest and Yummiest Baked Chicken Chimichangas Ever

    If you are as addicted to Mexican food as me and my family you are probably always wanting to replicate the same food at home. Sometimes, it seems the recipes aren’t very ‘quick’ or ‘easy’. But they can be with some trial and error! I’m particularly fond of chimichangas. At a really good Mexican restaurant they are usually fried and OMGeee they are soooo freakin’ good!

    I really wanted to make them at home and after tweaking a little bit I figured out a super yummy and really easy way to make baked chicken chimichangas! These are seriously slap-yo-mama good!

    Not very complicated at all these chimichangas can be ready to devour within 50 minutes from start to first decadent bite. To make these even better, yeah, it’s possible, add this To Die For White Queso Cheese Dip! I love to pour it over the chimichangas on my plate and add some yummy restaurant style tortilla chips.

    Easy Baked Chicken Chimichangas

    The yummiest, easiest baked chicken chimichangas ever! From start to fork in the mouth in 50 minutes.

    Cuisine: Mexican

    Ingredients

    • 1.5 pounds skinless, boneless chicken breasts (or tenders) boiled and shredded, I prefer the tenders as they cook quicker
    • 10-12 flour tortillas
    • 1 can small can of green chiles drained
    • 1 small green pepper, diced saute with the diced onion in small amount of olive oil
    • 1 small diced onion saute with green pepper in small amount of olive oil
    • 1/2 tsp cumin
    • 1/2 tsp salt
    • 1/4-1/2 tsp black pepper
    • 1/4-1/2 tsp garlic powder
    • 2 cups shredded monterey jack cheese
    • 1/8 cup melted butter

    Instructions

    • Boil the chicken in a pot of water for 8-12 minutes until done, remove from pot and shred
      boiled shredded chicken
    • While the chicken is boiling saute the diced onion and green pepper in a small amount of olive oil until tender
      sauteed onions and green peppers
    • Combine the cheese and dry ingredients in a bowl and add the shredded chicken and sauteed onions and peppers
      chimichanga mix
    • Line a large cookie sheet with aluminum foil, spray with cooking spray lightly
      ready to bake chicken chimichangas
    • Assemble the chimichangas. Place a tortilla on the prepared pan, put a 1/4-1/2 a cup of chicken mixture in the middle of each tortilla. Fold the tortillas long sides toward the middle then the short end over that. Place folds down on the pan. Spread melted butter over the chimichangas then bake at 400 degrees for 20-25 minutes until browned to your taste.
      Serve with a cheese sauce, shredded cheese, salsa, sour cream or whatever you like. Add jalapenos on the side, oh and definitely some mexican rice!

    I’m seriously not kidding, these are simply amazing and the White Queso Sauce is a perfect addition. Oh, add some yummy Mexican style rice and refried beans if you like. Also, if you have any chimichangas left they are great to freeze and reheat for a simple lunch. Yum yum give me some!

    Hi everyone! I’m not sure what I like most about Valentine’s Day, the feeling of love in the air? The chocolate? Pretty flowers, no roses for me, I prefer wild flowers, daisies, carnations something delicate and pretty. Although, with my darned allergies I really prefer a cute teddy bear or artificial flowers. Oh, and chocolate? Did I forget to mention chocolate?!

    I love the pretty decorations, just everything about the whole month feels special. My hubby and I don’t really do anything special for Valentine’s Day anymore. It’s kinda sad I guess because we used to leave little love notes for each other all through the year. We’ve apparently gotten lazy about it. I’d like to change that because I really miss leaving little surprises and I sure miss getting them. We’ve never been ones to do elaborate shows of affection. No huge gifts of fancy jewelry or luxurious items. I prefer subtle jewelry and we usually pick it out together and usually not even around a holiday. I love little gifts that say ‘hey, I love you and I thought of you when I saw this’. That, to me, means so much more than dropping a lot of money on a fancy ring or pair of earrings just because it’s a special holiday. Not that I knock those that do, heck, if we could afford it I might change my tune!

    Ha, John, my hubby, loves pickles, olives, summer sausage, Reese’s, popcorn and so much other stuff. He’s Type 2 diabetic now though so not too many Reese’s! This past Christmas me and our daughter, Amanda, were in Tractor Supply and found a very large, single packed pickle. That thing didn’t last long, oh, and a jar of garlic stuffed olives from Walmart, and garlic summer sausage from Rural King. That’s my man, pretty easy to please most of the time.

    My favorite Valentine’s Night tradition has become staying in. Just think of the possibilities ;). The night doesn’t have to be elaborate. Put the kids to bed early and have a special night at home with your Valentine, or heck, beg the in-laws or a friend to keep the littles for the night….or, if you’re like us your ‘kids’ are adults living at home…sometimes kinda awkward but it works for us.
